Q&A: Would this modification to a chicken recipe work out ok?

Question by EC: Would this modification to a chicken recipe work out ok?
I want to try this chicken recipe that calls for browning the chicken, then putting it in the oven with some oil, garlic, shallots, parsley, sage, and thyme for an hour or so.

I really don’t feel like blowing almost $ 10 on packages of fresh parsley, sage, and thyme for only one recipe. So, I was wondering if, instead of buying those herbs, would it work out all right if I shook some dried Herbs de Provence into the oil?

(Herbs de Provence is a mixture of rosemary, marjoram, basil, savory, bay leaf and thyme. I just have a little McCormick brand shaker full of the dried, chopped herbs.)

Also, I know that when using dried herbs you use 1/3 the amount that you’d use for fresh herbs — but the recipe calls for “a few pieces each” of the parsley, sage, and thyme. How much of the Herbs de Provence should I use?
In response to the early answerers:

The recipe called for the herbs to just be distributed in the oil and around the chicken pieces. Should I just randomly shake the herbs around the oil, then?

I assume that’s the case…?

it will work. use about a 1/2 teaspoon of the dried herbs for each chicken serving (ex- 1/2 teaspoon for each breast). Let me know how it works out!

Very good grilled chicken recipe? Sauce recipe optional?

Question by rpmgonewild: Very good grilled chicken recipe? Sauce recipe optional?
I want a recipe for grilled chicken as when I make it it is too spicy or too dried out. Please help me out with an awesome recipe that would make Emeril proud!
I prefer seasonings over marinades and don’t care for Italian dressing. Also, rotisserie isn’t grilling. As for randomly searching the web, that proves to have millions of results that aren’t always good. I asked the question to find proven good chicken recipes.

Question by e_russell2004: What could be a very simple fried chicken recipe?
I need to find a nice fried chicken recipe that will go well with pasta. Even just the marinade would do. I would prefer something that’s easy to prepare and the ingredients are easy to find along Manila. Any suggestions?

Clean your chicken
Pat them dry with a paper towel or something
Sprinkle a little bit of salt, pepper, and garlic on it.

For the flour add a little bit of pancake mix (optional)
add salt pepper garlic and whatever other seasoning you may like..
Mix it up

Dip the chicken in the flour
And fry away….. :)
I like to use old bay and some chicken seasoning or cajun seasoning on my chicken. That could be found at any food store for about a dollar and some change.

You could also dip your chicken in some eggs then flour them and then fry them… Thats good too!

6 boneless skinless chicken breasts
1/4 cup honey
1/4 cup soy sauce
1/2 cup water
1 tablespoon cornstarch
1 teaspoon ground ginger
1 teaspoon red pepper flakes (optional)
1 tablespoon toasted sesame seeds

Cut chicken breast into 1 inch strips.
Heat a large non-stick skillet that has been sprayed with Pam, over medium-high heat.
Cook chicken strips for about 6 minutes until no longer pink.
Mix together honey, soy sauce, water, corn starch, ginger and red pepper flakes.
Whisk until no corn starch lumps appear.
Pour sauce mixture into skillet with chicken.
Cook until sauce thickens slightly.
You can add more water if sauce is too thick.
Sprinkle with sesame seeds.
Cover and simmer for 10 minutes or until chicken starts to soak up the sauce.
